Opportunity

We are seeking a highly capable Venue Manager to lead the team at Byblos Melbourne. This role is central to delivering our brand promise: imaginative cuisine, exceptional service, and luxurious ambience. You’ll partner with the Executive Team to shape all guest touchpoints—from restaurant and bar service to events and kitchen operations. lead this venue into an exciting new chapter of the relaunch to come Byblos 2.0

Key Responsibilities Skills & Qualifications

As Venue Manager at Byblos Melbourne, you will:

Lead, build & support your team
Oversee recruitment, training, rostering and performance management to foster a high-performing, guest-centric team.

Deliver service excellence
Maintain and elevate service standards throughout restaurant, bar, and events. Coach staff to consistently surpass guest expectations.

Operations & inventory control
Manage POS systems, stock control, ordering, cost monitoring, and ensure operational efficiencies to meet financial targets.

Collaborate on food & beverage
Work closely with kitchen and beverage leads to shape menus and drink lists that align with Byblos’ Lebanese-Mediterranean identity and business revenue goals.

Events & functions oversight
Oversee events from conception to execution in our Dining Room, Riverside Terrace, Harem Lounge, Phoenician Alcove and other spaces. Ensure every function is seamless, memorable, and profitable.

Sales & marketing strategies
Drive promotions, strategic partnerships, guest retention programs, and seasonal initiatives to grow traffic and revenue.

Compliance & safety leadership
Ensure all health, safety, licensing and compliance standards are met. Maintain clean, secure, and safe premises for guests and staff

Skills & Qualifications

Experience: At least 2 years in a similar role (restaurant/bar/events) with high volumes and upscale expectations.

Leadership: Strong ability to motivate, mentor, and lead by example; confident decision-making under pressure, coaching and empowering your team.

Operational excellence: Proficient in POS, inventory management, scheduling/rostering tools; solid financial acumen.

Communication: Exceptional interpersonal skills, able to liaise with guests, staff, suppliers, and the executive leadership.

Guest focus: A passion for hospitality; committed to delivering a memorable guest experience in every service.

Professionalism: Integrity, attention to detail, and ability to maintain standards in luxury hospitality.

Eligibility: Must have full working rights in Australia.
