The Cellar is our energetic and inviting lower ground venue, a place where bold wines and an Italian-inspired menu are served with personality and pace. It’s dramatic, transportive, and brimming with energy. Handmade pasta casual Italian comfort executed with attention to detail and finesse.

The Lodge Little Collins, Fine Dining Level 1 Is the showstopper, a bright, refined dining room that celebrates the best of Victorian produce with elegance and occasional flair. The space is both grand and intimate, designed to stir the senses and celebrate the art of hospitality. The menu is a celebration of premium Australian produce. With a focus on exceptional quality, craftsmanship and technique.

Roles Available

We are hiring for two separate kitchen teams.

The Cellar Casual Italian comfort executed with attention to detail and finesse

Italian cuisine & pasta making experience preferred

The Lodge Little Collins Fine Dinning executed with finesse, exceptional quality & craftsmanship

Fine Dining experience required 2 - 3 hats or Michelin star experience preferred

The Role

We are looking to hire an experienced Senior Chef who can

Manage the pass and drive the kitchen team.

Execute each station with precision, consistency and lead by example.

Work side by side with our Chef de cuisine and follow direction.

Confidently adhere to ordering systems and procedures.

Monitor prep work and production processes to ensure efficiency and accuracy.

Maintain consistency in taste, quality, and presentation across all dishes.

Operate software and execute the day-to-day tasks in running the kitchen.

Uphold the kitchens standards in food safety.

Step in to lead the kitchen during the Head Chefs absence.

Assist in training and mentoring junior chefs, cooks, and apprentices.

Minimize waste and control food costs through smart stock rotation and portion control.

Coordinate with the Head Chef, restaurant manager, and suppliers as needed.

To be successful in this role you will-

Have 3 years' experience in a senior role in a high-end restaurant.

Have a high attention to detail and finesse and ability to uphold high standards.

Be organized and have good time management and multitasking.

Have a positive attitude and be keen to learn as well as teach others.

Must have good communication skills and be able to communicate clearly with both kitchen and front of house.
