The role
As the Sous Chef at Ishizuka, you will play a pivotal role in supporting the Head Chef in delivering exceptional Japanese-inspired fine dining experiences for our discerning clientele. Based in the heart of Melbourne, this full-time position will see you collaborate closely with the culinary team to elevate the standards of our kitchen operations.
Key responsibilities
Assist the Head Chef in menu planning, recipe development and food preparation
Manage day-to-day kitchen operations, including staff scheduling, inventory management and quality control
Train and mentor junior kitchen staff to uphold the highest standards of food safety and presentation
Collaborate with the front-of-house team to ensure seamless service and a consistently outstanding dining experience
Contribute to the continuous improvement of kitchen processes and procedures
What we're looking for
Minimum 3 years' experience as a Sous Chef or equivalent role in a high-end restaurant or fine dining establishment
Proven track record of delivering exceptional culinary creations, with a strong understanding of Japanese cuisine and techniques
Ability to work collaboratively in a fast-paced, high-pressure environment while maintaining a calm and composed demeanour
Strong leadership skills and the capacity to effectively train and motivate a kitchen team
Excellent communication and interpersonal skills to liaise with the front-of-house team
Passion for sourcing and working with the finest seasonal ingredients
