About the role

We are seeking an experienced Sous Chef to join our dynamic team at KATORI JAPANESE' in Box Hill, VIC. As Sous Chef, you will play a vital role in supporting the Head Chef and ensuring the smooth running of our bustling kitchen. What you'll be doing

Assisting the Head Chef in the overall management and execution of kitchen operations

Overseeing the preparation and presentation of high-quality Japanese cuisine

Ensuring adherence to food safety and hygiene standards

Supervising and training kitchen staff, delegating tasks and responsibilities

Participating in menu development and testing new recipes

Maintaining inventory control and ordering supplies as needed

Fostering a positive and collaborative team environment

What we're looking for

Minimum 3 years of experience as a Sous Chef or in a similar role within a reputable restaurant or catering establishment

Strong sushi and sashimi background

Proven track record of managing a fast-paced kitchen environment and leading a team of chefs

Excellent knowledge of Japanese cuisine and culinary techniques

Strong organisational and time management skills

Ability to work well under pressure and thrive in a dynamic, fast-paced environment

Excellent communication and interpersonal skills to effectively liaise with the kitchen team and management

Passion for delivering exceptional customer service and maintaining high standards
