As a skilled Fine Dining Restaurant Manager you will lead both our premium dining and cellar door experiences in the heart of the Adelaide Hills wine region. This unique dual role combines the art of fine dining with the passion for wine, alongside the exciting responsibility of managing a wide range of events. Whether it’s intimate wine tastings, large wine dinners, or private or public events, you'll create unforgettable moments that showcase the best of our wines, culinary offerings, and breath-taking estate.

Key Responsibilities

Restaurant Management (Fine Dining)

Oversee daily operations of the fine dining restaurant to ensure premium and extraordinary guest experience.

Lead, train, and inspire front-of-house staff with an emphasis on service excellence.

Collaborate with the Executive Chef to craft seasonal menus that pair seamlessly with our estate’s wines.

Manage reservations, guest interactions, and feedback to maintain high service standards and satisfaction.

Control budgets, labor costs, and operational efficiency, ensuring smooth running of the restaurant.

Maintain compliance with local health, safety, and liquor licensing regulations.

Responsibilities

Cellar Door Management

Working with our Events/Hospitality Manager, you will lead the cellar door team to provide a memorable, engaging, and educational wine tasting experience for guests.

Develop and execute wine tasting experiences, tours, and private events that showcase our wines and winemaking processes.

Promote wine sales through wine club memberships, direct wine purchases, and exclusive offers.

Oversee wine inventory to ensure the cellar door is well-stocked and organized.

Coordinate and execute local marketing and promotional activities, working closely with the marketing team to increase foot traffic and visibility.

Develop and implement sales strategies to increase the revenue generated from cellar door operations.

Event Management

Execute events at both the restaurant and cellar door, ensuring seamless coordination and excellent guest experiences.

Collaborate with the Event/Hospitaility Manager and marketing team to create memorable experiences

Ensure the smooth running of all events, including logistics, guest coordination, staff training, and adherence to the brand’s high standards.

Host VIP and corporate events at the cellar door and restaurant, ensuring every detail is meticulously planned and executed.

Requirements

3+ years of hospitality management experience, including experience in both fine dining and winery environments would be ideal.

WSET Level 2 or higher (or equivalent) is preferred.

Proven experience in event planning and management, with a strong ability to handle multiple event types and sizes.

Exceptional leadership and interpersonal skills to manage and inspire teams.

Strong financial acumen for managing budgets and costs related to restaurant, cellar door, and events.

Proficiency with POS systems, reservations software, and inventory management tools.

RSA certificate (or regional equivalent) is required.

Hours include weekends and evenings, as required.
