Oliveti is our coastal gem – a bustling Italian restaurant in Glenelg South, known for its warm atmosphere, curated wine list, classic cocktails, and house-made dishes that pay homage to traditional Italian flavours.

The Role:

As Restaurant Manager, you’ll be the face of Oliveti, overseeing daily operations and ensuring the highest standards of service, quality, and team performance.

Key Responsibilities:

Open and close the venue independently and reliably

Lead and motivate a passionate front-of-house team

Deliver an exceptional guest experience, every time

Oversee rosters, inventory, and day-to-day operations

Train and mentor staff with on-shift coaching and development

Work closely with the kitchen and bar teams to maintain smooth service

Drive performance, efficiency, and a positive team culture

What We’re Looking For:

Previous experience in a similar management role within a restaurant

Strong knowledge of food, wine, and cocktails – a genuine passion for hospitality

Excellent communication and leadership skills

Hands-on management style with the ability to lead from the front

Ability to open and close the venue with confidence

Availability to work nights and weekends – Oliveti operates 7 days a week
