Pilu at Freshwater is one of Sydney's most respected dining destinations - a two-hatted restaurant overlooking beautiful Freshwater Beach. We're now seeking an experienced Venue Manager to oversee both Pilu at Freshwater and Pilu Baretto, ensuring smooth daily operations, financial performance, and an exceptional guest experience.

About the Role

Reporting to the General Manager, the Venue Manager is responsible for the day-to-day operations of the restaurant and café, leading a large, professional team across front of house.

This role suits a hands-on hospitality leader who thrives in a dynamic environment, with strong business acumen, leadership skills, and the ability to balance the operational, financial, and human sides of running a busy venue.

You'll work closely with the General Manager and Owners to deliver exceptional service standards, manage budgets and cost targets, lead the management team, and uphold the integrity of the Pilu brand.

Key Responsibilities

Oversee all aspects of venue operations across Pilu at Freshwater and Baretto

Lead, train, and mentor a team of restaurant and café managers, supervisors, and waitstaff

Manage financial performance including budgets, wage costs, and revenue targets

Forecast, review, and report on key business metrics and performance outcomes

Ensure compliance with licensing, WHS, and company policies

Support the delivery of exceptional guest service and handle any escalated feedback professionally

Drive operational improvements and efficiency across all departments

Maintain the venue's appearance and uphold brand standards

Work with the marketing and events team to implement new initiatives

About You

You're an experienced leader who combines operational expertise with a passion for hospitality. You understand what exceptional service looks like and know how to build and inspire a team to deliver it every day.

To succeed in this role, you'll have:

Minimum 2 years' experience in a similar management position

Strong leadership and communication skills

Excellent financial and business acumen

A calm, professional manner and ability to perform under pressure

Exceptional organisational and problem-solving skills

Solid computer literacy (Outlook, Excel, POS systems, OpenTable, FoundU)

Current RSA and knowledge of licensing and compliance requirements
