CPTN Jack's is a premium waterfront restaurant located in Yaringa Harbour, Somerville, on the Mornington Peninsula. We deliver a relaxed yet elevated dining experience with a strong Mediterranean influence, fresh seasonal produce, wood fire cooking and warm coastal hospitality.

The Role

We are seeking a hands on Head Chef who is passionate about Mediterranean cuisine, team culture, and running a kitchen like a business. You will lead the kitchen, collaborate closely with management on menu direction, performance targets, and operational decisions, and play a key role in driving the venue forward.

This role requires strong communication, systems thinking, and a genuine commitment to building a united team culture. FOH and BOH operate as one at CPTN Jack's, and we want a chef who embraces shared success and clear communication.

Key Responsibilities

• Lead daily kitchen operations with calm, confidence, and high standards
• Develop seasonal menus with Mediterranean inspired flavours and woodfire focus
• Maintain exceptional food quality, consistency, and presentation
• Mentor and grow a committed kitchen team
• Work in partnership with front of house to ensure seamless service
• Manage ordering, stock, food safety, COGS, and labour within targets
• Support a culture of cleanliness, organisation, and respect

About You

• Proven Head Chef or senior Sous Chef ready for the next step
• Strong Mediterranean and produce driven food knowledge
• Confident with cost control, recipe costing, supplier management, and labour planning
• Understands budgets, food cost control and GP targets, financial accountability
• Collaborative mindset and able to work closely with management
• Calm leader who prioritises communication, structure, and culture
• Proud of your craft and motivated to grow a long term venue
