About the role
Meltemi Mediterrania is seeking an experienced Executive Sous Chef to join our dynamic team. This full-time role will be based in our restaurant located in Broadbeach, Queensland. As the Executive Sous Chef, you will play a crucial role in supporting the Head Chef and overseeing the smooth running of the kitchen operations.
What you'll be doing
Assist the Head Chef in managing and leading the kitchen team to deliver exceptional culinary experiences
Take charge of the kitchen in the Head Chef's absence and ensure seamless workflow and high-quality food production
Participate in menu planning and development, contributing ideas and techniques to enhance the restaurant's offerings
Oversee food preparation, presentation, and portion control to maintain consistent standards
Mentor and train junior chefs, fostering their skills and professional growth
Ensure adherence to food safety regulations, kitchen hygiene, and cost control measures
Collaborate with the wider team to deliver exceptional customer service and a memorable dining experience
What we're looking for
Minimum of 5 years of experience as an Executive Sous Chef or equivalent role in a similar high-volume restaurant setting
Formal culinary training or qualifications in hospitality/culinary arts
Proven track record of leading and motivating a kitchen team to deliver consistently high-quality dishes
Proven ability to manage kitchen operations efficiently and calmly under pressure
Strong knowledge of food safety, hygiene, and cost control practices
Effective communication and interpersonal skills to collaborate with the wider restaurant team
Strong knowledge of Coastal Mediterranean cuisine and ingredient-driven cooking
Experience with rotisserie is highly advantageous
