You’ll be based in Moonah and partner closely with our Operations Manager, Regional Manager, Venue Managers and Bottle shop Managers to keep teams resourced, compliant and guest focused.

Step into a newly defined role with real scope to shape how we roster and manage labour across a large, multi-site portfolio. You’ll standardise practices, introduce clear dashboards and cadence reporting, and help leaders make faster, data-driven decisions. What you’ll do
- Plan and publish rosters, weekly, in Employment Hero Payroll (EHP) across 22 venues, 6 hotels, 14 bottle shops, 1 café and 1 production kitchen, aligning staffing to demand (sales, bookings, events, seasonality) and budget.
- Balance coverage across sites, skills, availability, leave and training, coordinating efficient cross site cover without blowing costs.
- Ensure compliance with the Hospitality Industry (General) Award 2020: breaks, span of hours, juniors, overtime triggers, allowances and public holidays; apply rules across rosters, timesheets and payroll.
- Govern time and attendance: monitor roster vs actual daily in EHP, resolving exceptions with managers and payroll before cut off.
- Analyse labour costs: track overtime, penalties and labour % of sales; deliver clear weekly site reports with variances, risks and recommended fixes.
- Forecast and re forecast labour needs by venue and daypart; maintain labour budgets and provide monthly updates.
- Drive continuous improvement by spotting trends (overtime hotspots, under/over staffing, rate changes) and implementing efficiency lifts.
- Partner with leaders, coach venue teams on demand planning, shift design and cost control.
What you’ll bring
- Experience in rostering planning and labour cost analysis (hospitality, retail or multi-site operations ideal).
- Sound knowledge of Australian awards/EBAs, Fair Work obligations and payroll cut offs.
- Commercial and data driven mindset with great communication skills to work with multiple managers across sites.
- High attention to detail, data integrity and calm execution during peaks and last-minute changes.
- Comfortable with Employment Hero Payroll or similar rostering and time and attendance systems, and confident using the Microsoft Office suite.
