About the Role
As Sous Chef you will be responsible for managing the food production for our cafes, functions and events and assists in the planning and costing of menus, and controls procedures for portion control, stock control and storage, wastage control, staff training and ensuring that Health and Safety and Food Safety Regulations are met.
In addition to the base salary and commuted overtime allowance*, the role will attract the following shift penalties and additional leave:
20% loading on rostered shifts commencing prior to 6am or finishing after 8:30pm or weekend shifts
30% loading on shifts finishing on or after midnight
1-week additional leave for employees working more than 12 Sundays per calendar year
You will be required to work 152 hours per 4 weeks spread over varying days of a 7-day operation. Reasonable regular overtime to meet business needs will be required in addition to the base hours and overtime will be compensated.
Whilst the position will be based at Mount Claremont, mobility may be required between the portfolio of facilities.
*A Commuted Overtime Allowance is an annualised payment paid on a fortnightly basis in lieu of ad-hoc overtime payments in acknowledgement of the additional hours undertaken by these positions.

About the Person
The ideal candidate will be a qualified Chef who has demonstrated experience in all facets of quality cooking and the day to day running of a kitchen. Whilst not essential previous experience catering for large scale functions of between 500 and 2000 people would be highly advantageous.
