About the Role

We are seeking an experienced and passionate Bar Manager to lead the day-to-day bar operations of Dream, Sydney’s newest nightclub and KTV. The Bar Manager will work closely with the General Manager to ensure smooth, efficient service, consistent stock control, team performance, and exceptional guest experiences.

Key Responsibilities

Oversee day-to-day bar operations

Hire, train, and lead a team of bartenders during service

Maintain high standards of service, cleanliness, and presentation

Manage stock levels, place orders, track usage, and reduce waste

Ensure compliance with RSA, licensing laws, and venue policies

Assist the General Manager with scheduling, training, and staff development

Contribute to the development of cocktail menus, product offerings, and a simple food menu

Liaise with suppliers and service technicians as needed

Assist with operations and service in the KTV area

Handle customer feedback and resolve issues with professionalism

Support the venue’s culture of quality, teamwork, and hospitality

What We’re Looking For

Previous bar management or senior bartender experience in a fast-paced venue

Strong leadership and communication skills

Experience with stock management and ordering systems

Ability to work independently and take initiative

A passion for hospitality and creating great customer experiences

Sound knowledge of beer, spirits, wine, and cocktail service

Valid RSA

Availability to work from 8:00 PM to 4:00 AM
