Head Chef – Mercure Clear Mountain Lodge

Mercure Clear Mountain Lodge is a unique destination just 35 minutes from Brisbane CBD and 15 minutes from Eatons Hill and Samford. Nestled in a serene, elevated location, our venue features 51 well-appointed accommodation rooms, an à la carte restaurant, dedicated conference rooms, and a renowned function centre known for hosting exceptional weddings, events, and corporate functions.

We are currently seeking a talented and passionate Head Chef to lead our kitchen into an exciting new chapter. This is an excellent opportunity for an experienced Head Chef—or a highly skilled Senior Sous Chef ready to take the next step in their career.

As our next Head Chef reporting directly to the General Manager, you will:

Be responsible for ensuring the smooth and efficient running of the kitchen operation

Planning of menus, estimating food & labour cost, ordering, closely monitoring and controlling COGS.

Recruit all kitchen staff

Roster team members while interpreting and acting upon financial information.

Develop external relationships with appropriate suppliers.

Analyse competitors & market trends while providing constant & consistent development of the menu.

Have extraordinary culinary flair and a motivating leadership style to support your team.

Ensure high quality and presentation of food provided to guests, according to property standards and timeframes of service

Maintain a safe clean and organised work environment with emphasis on high food safety standards

What we are looking for:

Previous experience in a Head or Senior Sous Chef role

A la carte, Conference & Wedding catering experience is essential

Someone with a confident, modern, and creative cooking style with a strong emphasis on quality and presentation

A strong understanding of food cost and control

Trade Qualified - Essential

Current Food Safety Supervisor Certificate

Experience in month-end stock take

A flexible approach in adapting to guest requests.

Great communication skills and ability to develop and motivate a team.

Good time management skills and the ability to work well under pressure.

Flexibility to work some split shifts required.
