About the Role: We are currently seeking experienced Head Chef and Fryer Chef candidates to join our dynamic kitchen team at Okami Marrickville. If you have a solid background in high-volume kitchen operations, attention to detail, and a passion for delivering high-quality food, we’d love to hear from you. Experience in Asian or Japanese cuisine is highly regarded.

Head Chef – Key Responsibilities

Oversee kitchen operations and assist in supervising the team.

Cook to order using various techniques and ensure consistent food quality.

Prepare and season ingredients following recipes and portion standards.

Monitor equipment temperatures and kitchen hygiene practices.

Manage stock, procurement, and minimize food waste.

Provide training and ensure kitchen procedures are followed.

Fryer Chef – Key Responsibilities

Operate the fryer station, ensuring food is cooked to order and meets presentation standards.

Monitor oil temperature and quality, replacing oil as needed to ensure food safety and taste.

Maintain a clean and well-organized fryer station at all times.

Follow all food safety and hygiene protocols.

Ensure speed and consistency during peak service hours.

Prepare fryer ingredients and ensure station is well-stocked before each shift.

Collaborate with the broader kitchen team to ensure smooth service.

General Requirements (Applicable to Both Roles)

Minimum 2 years’ experience in a commercial kitchen.

Strong understanding of food safety and hygiene standards.

Ability to work under pressure in a fast-paced, high-volume environment.

Experience with Japanese or Asian cuisine is a plus.

Reliable, proactive, and a team player with a passion for hospitality.

Good communication and time management skills.

Must have Australian work rights
