Sushi Head Chef & Japanese Grill Sous Chef - Western Sydney

We're searching for two experienced chefs to join the leadership team across two dynamic and fast-paced venues in Western Sydney. Whether you're a Sushi Head Chef ready to lead a high-performing kitchen, or an Experienced Sous Chef, with refined experience and serious skills in Asian grill and premium meats - this is an opportunity to grow your career alongside top industry professionals.

These are hands-on roles suited to passionate chefs who thrive in high-volume, quality-driven kitchens and are ready to step into strong leadership positions.

Sushi Head Chef

Key Responsibilities:

  • Lead all aspects of the sushi kitchen - from menu development to execution
  • Manage, train and schedule kitchen staff, potential path to manage multiple sites.
  • Oversee food quality, hygiene and health & safety compliance
  • Manage stock, daily invoices and cost control
  • Collaborate with front-of-house and management to deliver exceptional guest experiences

What You'll Bring:

  • 5+ years in Japanese or Asian kitchens, with strong sushi experience
  • Excellent leadership, communication and delegation skills
  • A keen eye for detail, presentation and food safety
  • Experience with kitchen reporting, rostering, and ordering
  • Food Safety Certificate essential

Package: $83K-$90K + Super | Full-time | Must be available weekends

Japanese Grill Sous Chef

Join a high-calibre team under the guidance of a renowned Executive Chef. We're seeking a skilled Sous Chef with experience working with premium dry-aged meats and operating a Josper wood-fired grill. You'll be cooking in a modern kitchen

Ideal Candidate:

  • Strong grill and protein cookery background
  • Experience in premium or hatted restaurants highly desirable
  • Capable of leading sections and mentoring junior chefs
  • Calm under pressure, with high attention to detail

Package: Up to $90K + Super (based on experience)
