The opportunity

We are seeking an experienced and talented Sous Chef to join our team at Kinoko' in the vibrant coastal town of Byron Bay. As Sous Chef, you will play a key role in supporting our Head Chef in executing our innovative Japanese-inspired menu and ensuring the smooth running of our bustling kitchen.

Key responsibilities

Assist the Head Chef in planning, preparing and executing all menu items to the highest standard

Oversee and coordinate the day-to-day kitchen operations, including staff scheduling, inventory management and budgeting

Foster a positive and collaborative kitchen culture, leading and mentoring the team of chefs and kitchen staff

Ensure strict compliance with all food safety and hygiene regulations

Contribute to the development of new seasonal menus and specials

Monitor and maintain kitchen equipment and facilities to a high standard

What we're looking for

Minimum 3-5 years' experience as a Sous Chef or in a similar senior culinary role, ideally in a high-end restaurant or catering environment

Strong technical cooking skills and expertise in Japanese/Asian cuisine

Proven ability to lead and motivate a team, fostering a positive and productive kitchen culture

Excellent time management and organisational skills, with the ability to work calmly under pressure

Passion for sourcing and using high-quality, locally-sourced seasonal ingredients

Food safety and hygiene certification, and an understanding of relevant regulations
