Role + Responsibilities

· Work with Group Venue Manager and Venue Manager on menu design and cost of goods sold analysis

· Run service shifts

· Staff training – including food handling and plating

· Place orders and identify stock levels of prepped food.

· Oversee documentation and invoicing, in accordance with group accounting procedures liaising with the Finance Department

· Store food products in compliance with safety practices

· Assist in the coordination of functions and dinner & show operations and delivery.

· Supervise food prep and cooking, in line with HACCP

· Check food plating and monitor portion sizes

· Maintain cleanliness, sanitation and safety standards in the kitchen area

· Deliver dishes with a high level of culinary skill.

· Ensure compliance with food standards

· Define and refine on shift and off shift procedures

Preferred Skills

Worked in a commercial kitchen for a minimum of 3 years.

Strong operational and coordination skills

Create sound procedures and ensure efficiencies

Strong people management skills

Time management skills

The desire to produce a high-quality meals and service experience

A love of beer is beneficial but not necessary

Solid computer and record keeping skills
