Up above the coastline, life moves a little slower. At Sully’s Rooftop, perched atop the soon-to-launch Avani Mooloolaba Beach Hotel, we keep things simple: Fresh drinks and food, laid-back tunes and views that do most of the talking.
Sully’s menu will offer the best of modern Australian dining. Think produce led dishes, fresh seafood straight from the ocean, chargrilled meats, vibrant salads and share plates made for long afternoons in the shady sun.
We’re seeking a dynamic and experienced Venue Manager to lead the pre-opening and ongoing operations of this landmark venue.
About the Role
Reporting to the General Manager, you’ll oversee daily operations across the restaurant, bar, pool service, and events. You’ll manage a passionate team, drive service excellence, and ensure the venue operates efficiently and profitably while delivering memorable guest experiences.
Key Responsibilities
Lead and manage all food and beverage operations with a focus on quality and consistency.
Ensure staff adhere to service standards, grooming, and safety protocols.
Collaborate with the Head Chef to enhance food offerings and presentation.
Monitor occupancy, forecast revenue, and support marketing initiatives.
Manage staffing, training, and performance in consultation with HR.
Maintain hygiene, safety, and presentation across all service areas.
Oversee financial reporting, cost control, and budget alignment.
What We’re Looking For
Minimum 3 years’ management experience in a similar hospitality environment.
Strong leadership, communication, and problem-solving skills.
RMLV and Approved Manager licence.
Demonstrated financial acumen and proven ability to manage operations and deliver financial outcomes.
Professional presentation and a guest-first mindset.
