The Role

We’re seeking a Bar Supervisor / Bar Manager to lead the bar in a high-energy, quality-driven restaurant environment. You’ll be creative yet operationally led—owning systems, GP, and training—while running a smooth, guest-led service. You will manage a small team of bartenders and collaborate closely with the floor and kitchen.

What you’ll do

Lead bar service across busy lunch/dinner and weekends; maintain spec and pace

Build, cost, and maintain cocktail lists and beverage offering. You will work closely with the venues Head Sommelier.

Train, roster, and develop a small bar team; deliver sharp pre-service briefs

Own ordering, stocktakes, supplier relationships, and COGS reporting

Uphold RSA, hygiene, and a positive, professional team culture

What you’ll bring

Essential: Proven experience working in a restaurant bar (not just pubs/clubs)

Preferred: Experience in hatted or award-recognised venues

Strong classic cocktail foundations with curiosity for Middle Eastern flavours

Operational discipline (costing, stock control, GP) with a creative mindset

Calm leadership, clear communication, and a team-first approach

Current NSW RSA (required)
