Trombar is a vibrant late-night bar and restaurant in Ascot Vale, known for great drinks, live music, and friendly service. We’re seeking an experienced Bar Floor Manager to lead our front-of-house team and keep operations running smoothly.

Key Duties & Responsibilities

Oversee all bar and floor operations during our trading days, ensuring efficient, high-quality service from open to close

Lead, train and roster front-of-house staff, maintaining excellent customer service standards

Prepare and maintain daily paperwork: shift reports, incident logs, staff attendance, and cash-up summaries

Manage stock control and inventory: ordering, receiving deliveries, updating records and reconciling stocktakes

Assist with budgeting, labour cost tracking, and weekly sales reporting for management

Ensure RSA compliance and adherence to all licensing, safety and hygiene regulations

Coordinate with kitchen and bar teams for events, functions and peak service times

Handle customer feedback, complaints and conflict resolution promptly and professionally

Support recruitment by screening candidates, onboarding new staff and conducting performance reviews

Requirements

Minimum 2 years’ experience in a supervisory or management role in hospitality (bar/restaurant)

Strong leadership, communication and organisational skills

Current Victorian RSA certificate

Excellent knowledge of cocktails, beer, wine and general bar operations

Proficiency with basic office software (Word, Excel, POS/back-office systems)

Availability to work Thursday through Saturday nights and public holidays

Demonstrated ability to prepare and manage administrative paperwork and financial reports
