Alcotraz Melbourne is looking for a FULL TIME Cocktail Bar Manager .

This is a hybrid role where previous people management experience is essential, along with a love of cocktails and experience in making them. Working side by side with the Venue Manager, you will form part of the operational leadership team to deliver one of Melbourne's most unique cocktail experiences.

This role will entail regular bar management responsibilities such as stock management/ordering, pre-batching and prep, scheduling the bar team, bar cleanliness, making high quality cocktails at high speed during shows as well as supporting the Venue Manager as needed.

The ideal candidate for this role is someone who's passionate about cocktails and loves designing new, exciting drinks. You're great at managing people and enjoy collaborating with a multidisciplinary team. Most importantly, you want to be part of something more than a normal bar job - this is immersive theatre meets cocktail bar.

Whilst this role will pay $75k incl super ($67,300 excl super) per year for a contracted 38 hours a week.

Essential Requirements:

Current Victorian RSA (Responsible Service of Alcohol) licence

Right to work in Australia

Strong knowledge of classic cocktails, mixology techniques, and ability to execute 50+ drinks per hour during peak service.

Proven experience in staff rostering, bar management, training new team members, and inventory management.
