About the role
We are seeking an experienced Senior Sous Chef to join the passionate culinary team at The Lodge Jamberoo', a renowned restaurant located in the beautiful town of Jamberoo, NSW. As Senior Sous Chef, you will play a pivotal role in overseeing the day-to-day kitchen operations, supporting the Head Chef, and contributing to the development of our innovative seasonal menu.
What you'll be doing
Assist the Head Chef in the planning and execution of all culinary operations
Supervise and coordinate the kitchen team to ensure efficient workflow and high-quality food preparation
Develop and refine recipes, ensuring consistency and adherence to the restaurant's culinary standards
Participate in menu planning, testing new dishes, and making recommendations to enhance the menu
Manage inventory, monitor food costs, and implement cost-saving measures
Ensure strict compliance with all health, safety, and hygiene regulations
Foster a positive and collaborative work environment, providing guidance and training to junior kitchen staff
What we're looking for
Minimum 5 years' experience as a Senior Sous Chef or equivalent role in a reputable restaurant or hotel
Formal culinary training, such as a diploma or degree in Culinary Arts or Hospitality Management
Proven track record of successfully managing a high-volume kitchen operation
Excellent understanding of food preparation techniques, plate presentation, and menu development
Strong leadership and team management skills, with the ability to motivate and mentor junior staff
Proficient in inventory management, cost control, and budgeting
Passion for using fresh, seasonal, and locally sourced ingredients
Excellent communication and interpersonal skills
