The Role:

As Senior Sous Chef, you’ll stand alongside our Head Chef to lead the kitchen through busy services, clean executions, and continued growth. You’ll bring structure and calm to the kitchen and pass, as well as creativity to the menu.

This is a hands-on leadership role for someone who thrives on both the stove and the strategy.

Our kitchen is built around the art of cooking with fire — experience with a Josper oven is essential to thrive and lead with confidence in this role.

What You Bring:

Technical Skill & Product Knowledge
Confident across all sections — particularly grill and fish — with an expert eye for detail and quality. Experience with a Josper oven is essential.

Consistency Under Pressure
You stay composed in the heat of service, leading by example and guiding the team with clarity and calm.

Operational Control
You take charge of rostering, ordering, food cost, and kitchen maintenance — ensuring standards are met without compromise.

Organisation & Cleanliness
You implement systems that keep the kitchen sharp: from cleaning and temperature logs to prep lists and service flows.

Menu Development
You collaborate on dishes that speak to the venue’s identity — rooted in modern pub fare, seasonal produce, and honest flavours.

Pride in Leadership
You treat the kitchen as your own — with discipline, drive, and deep respect for the craft and the team around you.
