Hours: Full Time (38 hours per week) – Ability to be available to work a flexible roster which will include early mornings (12am or 3am start time) across the 7 days of the week and which may also include some public holidays. Hours per week may be averaged over more than one week in accordance with The Award

Key Responsibilities:-
• Preparation and daily production of quality bakery products to Brumby’s specified guidelines and time frames
• Maintaining all bake house operations including a high standard of housekeeping (appearance & cleanliness) within the bakery in conjunction with Head Baker
• Maintaining stock levels including weekly stock orders & rotation of stock, accepting & checking all bake house deliveries
• Assist with stock takes as required from time to time
• Abide by company policies and procedures in relation to Occupational Health & Safety (OH&S) and Food Safety to ensure a safe working environment for staff, customers & contractors.
Qualifications:-
• This position requires Baker trade qualifications (Certificate 3 in Bread Making or equivalent) including at least 5 years experience in the industry. Evidence of qualifications & experience is required. Specific Brumby’s training will be initially provided to comply with Franchise requirements & will include ongoing training from time to time.

• Provide direction to Baker Team Support position as required from time to time

• Attend all staff meetings
• Attend all required ongoing training as per Brumby’s requirements
• Maintain own appearance, cleanliness and wearing the correct Brumby’s uniform at all times
• Take direction from Franchisee & Head Baker
• Abide by all company policies & procedures at all times including Anti-Discrimination & Sexual Harassment, Free Product policy &Drug & Alcohol policies.
Duties include:-
• Checking the cleanliness of equipment prior to & after completion of production to ensure Food Safety guidelines are met
• Checking the operation of equipment at all times to ensure compliance with Occupational Health & Safety guidelines.
• Operation of a commercial dough mixer, dough moulder, bun rounder, prover & 3 deck oven
• Checking & maintaining raw ingredients including ordering & rotation to ensure quality
• Making bread products from scratch including weighing ingredients, mixing, kneading, maturing, cutting, moulding and shaping doughs
• Monitoring proving times & oven temperatures and product appearance to determine baking times
• Co-ordinating & assisting with Support Team the forming, loading, baking, unloading, de-panning and cooling of batches of loaves of bread & bread rolls, cakes & pastries
• Emptying, cleaning and greasing baking trays and tins or directing Support Team in doing so
• Preparing pastries & fillings, cakes, biscuits, tarts & slices
• Glazing & decorating buns, pastries & other sweets with cream or icing
