We're on the hunt for our next leader at Mille Vini.

This is an opportunity to take the reins of a beloved Surry Hills venue and help steer it into its next phase. We're looking for someone with proven leadership experience who thrives in fast-paced, high-quality environments—and who’s ready to treat the venue as their own.

As Venue Manager, you’ll have full responsibility for daily operations, and work closely with ownership to bring the business vision to life. You’ll also take charge of the wine list and act as in-house sommelier, curating and evolving a thoughtful, engaging offering for our guests.

This is a role with real ownership and reward: for the right person, it includes profit share and wide-ranging autonomy.

The venue is part of Esper Group, a family owned and operated group running Mille Vini, Rovollo & Rosie Campbells.

What we’re looking for:

Strong management experience in premium hospitality

Sound wine knowledge (training support available if you’re nearly there)

An entrepreneurial mindset, and confidence overseeing all aspects of the venue

A natural leader who can build, inspire, and develop a high-performing team

Someone who genuinely enjoys guest engagement and building regular clientele

What you’ll be responsible for:

Leading and developing the front-of-house team

Delivering warm, polished service

Business development and growth initiatives

Weekly reporting and tracking key financial targets

Curating the wine list and beverage program

Supporting the marketing team with campaign ideas and content

Recruitment, onboarding, and team performance management

Helping shape new offerings and events tailored to our community
