About The Role
This role, reporting to the executive chef / group executive chef of Dining concepts, overseeing the daily preparation and maintenance of the kitchen operations alongside the Sous chef.
Main Responsibilities:
Ensuring all standards and procedures are met resulting in consistency, quality, and profitability
Ensure the efficient operations in the kitchen in the absence of Chef de Cuisine/ executive chef, while supporting the sous chef
To foster an open and supportive working environment
Assist in stock monitoring and ordering
Clearly understands stock rotation and the correct storage of perishable food items
Work closely with other employees in a supportive and flexible manner, focusing on the overall satisfaction of our guests
Take part in regular interdepartmental communications and department briefing to ensure and work towards the collective goal of the venue.
What You’ll Be Doing
Leading the Wok section of the restaurant, having immense knowledge and skill to amend and work on the fly.
Working alongside the Sous chef or head of the venue to ensure quality, standard and performance of the venue and staff.
Training of junior staff members in the operations of the venue.
Complying with and understanding the HACCP and food safety protocols for the venue.
Ensuring stock rotation, maintenance and stock takes with the venue and assisting in maintaining the budgeted food cost %
Your profile
Experience in a similar size and paced Venue
Full-Time commitment
Ability to work a 7-day rotating roster
Excellent understanding of HACCP and food safety
Asian and western kitchen training with proven skill in Asian wok cooking
Strong Knife skills with knowledge in butchery and carvery.
Must be able to communicate clearly in English.
Must have full working rights in Australia and currently live in Australia, preferably locations stated (Either Brisbane / Sydney for respective venues)
