We’re on the lookout for a passionate and experienced Head Baker / Pastry Chef to lead our bakery operations in Meeniyan. This is a hands-on leadership role perfect for someone who thrives in the early hours, values quality and tradition, and wants to grow within a vibrant, food-driven team.

Key Responsibilities

Lead daily baking and pastry production with a focus on quality, consistency, and innovation

Develop and refine recipes that reflect Trulli’s seasonal, Italian-inspired ethos

Collaborate with Front-of-House to ensure seamless service and communication

Manage ingredient costing and maintain profitability targets

Oversee stock control, ordering, and supplier relationships

Create and manage efficient staff rosters

Uphold the highest standards in cleanliness, food safety, and kitchen organization

Train and mentor junior staff – training support provided

What We’re Looking For

Minimum 5 years’ experience in a senior baking or pastry role

Strong leadership and team management experience

Solid understanding of kitchen operations, inventory, and cost control

Excellent communication and organisational skills

A passion for food, a positive attitude, and reliability for early shifts
