Duties and Responsibilities

Prepare and cook high-quality Italian dishes including fresh pasta, traditional sauces and seasonal specialties.

Ensure consistency in taste, presentation, and portioning of all dishes during service.

Assist in planning and designing menus in consultation with management, considering seasonal availability and customer preferences.

Manage inventory, ordering, and supplier communication.

Estimate food and labour costs, monitor kitchen budgets, and forecasting COGS as required.

Staff training including demonstrating and supervising cooking techniques ensuring knowledge transfer and skill development among the junior staff.

In food preparation cater to dietary and allergy requirements.

Ensure strict compliance with HACCP, food safety, and workplace health and safety protocols.

Ability to create/manage weekly specials

Responsible for staff rostering

Skills & Qualifications Required

Relevant Hospitality Diploma including Certificate III and/or Certificate (Australia) or at least three years of chef experience without a formal qualification

5 years previous experience as a Chef is required for this position.

Strong knowledge of cooking methods and operating kitchen tools and equipment especially with pasta cookery including sauce creation, portioning and flavour balance.

Ability to work full-time in a high-pressure, fast-paced kitchen environment.

Flexible to work on a rotating roster, including weekends and public holidays.

Experienced in commercial kitchens.

Strong experience running the pass in high pressure kitchen environments.

Ability to lead teams, train staff, and delegate tasks effectively.
