The Flagstaff Hill Golf Club is set in a picturesque area studded with mature gums and 2 creeks that meander through the course. A substantial man-made water storage facility forms part of the 7th tee challenge. The course is surrounded by almost 1,000 homes in inner southern suburban Adelaide.
Position Summary:
The Sous Chef is responsible for assisting the Head Chef in managing the daily operations of the kitchen and its employees. As a leader you will strive to maintain a safe, supportive, professional, and productive working environment.
You will provide kitchen leadership and manage the culinary team in absence of the Head Chef and maintain a focus on serving consistent high-quality food across our venue.
Personal Qualifications, Competencies and Attributes:
Minimum certificate 3 in commercial cookery or equivalent.
Strong understanding of food safety principles and a good understanding of HACCP principles and local food safety laws.
Ability to read and write in English and calculate basic Math’s.
Available to work flexibly across a 24/7 roster that may include split shifts, night time, weekends, and public holidays.
Minimum 5 years’ experience in a commercial kitchen and minimum 1 years’ experience within a “leadership” position.

Ordering, receiving and storing goods in line with local food safety laws.
Prepare ingredients safely. Cook foods to a set standard in a timely manner as directed by Head Chef and outlined in our recipes.
Maintain Food safety standards by collecting, monitoring, and recording temperatures consistently and diligently.
Ensure kitchen areas, including floors, all surfaces, equipment, refrigeration, and range hoods are kept cleaned and sanitised. Follow safety and sanitation practices of the company in line with chemical manufacturers direction of use.
Flexibility and knowledge to work across all sections of kitchen including but not limited to: Various functions, pass, pans, pizza, grill, cold larder, dessert and stewarding.
Ensure all operations, processes, equipment, employees, and methods comply with federal, state, and local laws regarding cleanliness, food safety and documentation.
Contribute to a positive, enthusiastic and engaged team environment that shows encouragement and patience. Develop professional working relationships with your colleagues’ ensuring conversations are respectful, inclusive and non-offensive.
Provide colleagues with continual training in all areas of the kitchen. Ensure proper technique and quality standards are maintained, quickly assess any problems, and proactively respond by assisting and supporting staff members as needed.
Have a strong understanding of food allergens, intolerances and dietary restrictions and provide knowledge and guidance of which foods may or may not be consumed by guests upon their request.
Actively assist in implementing cost control methods to maintain food cost and budgetary standards. Ensure correct portion controls are followed to minimise wastage across all food outlets.
Maintain appropriate stock par levels whilst assisting with the ordering. Ensure foods are always labelled and stored correctly.
Document a monthly stocktake count in the absence of the Head Chef.
Assist in maintaining a fair and balanced kitchen roster in-line with business demand, budget requirements and individual employee workplace agreements. Communicate efficiently and clearly with colleagues, vendors, and customers. Always be approachable to colleagues. Maintain a calm and controlled demeanour during stressful situations or critiques.
Promote a strong open relationship with peers and across departments to ensure functions and events are well organised, profitable, smooth and successful.
