The Role:

We are seeking an experienced and passionate Chef to join our dynamic culinary team. This role offers an exciting opportunity to lead with creativity, operational excellence, and a commitment to culinary innovation.

Key Responsibilities:

• Lead the creation and refinement of seasonal and à la carte menus, ensuring balance, authenticity, and profitability.

• Innovate new dishes that reflect Mediterranean culinary traditions while catering to local tastes and trends.

• Conduct regular menu reviews based on customer feedback, cost analysis, and market trends.

• Oversee daily kitchen operations to ensure efficiency, timeliness, and consistency in food quality and presentation.

• Establish, document, and monitor standard recipes and portion controls to maintain quality and minimize waste.

• Manage supplier relationships, negotiate pricing, and ensure the quality and timely delivery of ingredients.

• Enforce high standards of food hygiene, sanitation, allergen control, and occupational health & safety.

• Implement and monitor HACCP procedures and food safety management systems.

• Conduct regular kitchen audits and risk assessments to maintain compliance with regulatory standards.

• Recruit, train, and mentor kitchen staff to build a skilled, motivated, and cohesive team.

• Conduct performance reviews, provide constructive feedback, and foster a positive work culture.

• Develop succession planning and skills development programs for junior chefs and apprentices.

• Monitor kitchen expenditure and manage food cost targets to optimize profitability without compromising quality.

• Analyze sales data and collaborate with management to drive food sales and customer satisfaction.

• Support marketing initiatives with culinary input for promotions, events, and seasonal offerings.

• Engage with front-of-house teams to ensure smooth communication and timely service.

• Address special dietary requests and create customized dining experiences for VIP and group bookings.

• Occasionally interact with guests to receive feedback and enhance guest satisfaction.

Qualifications & Skills:

• Certificate III or IV in Commercial Cookery (or equivalent)

• Minimum 2 years of experience ideally within a Mediterranean or fine-dining environment

• Proven leadership, mentoring, and team-building abilities

• Strong understanding of kitchen financials, food costing, and supplier management

• Creative flair with excellent palate and presentation skills

• Thorough knowledge of food safety, HACCP, and WHS compliance
