SUPERVISOR/MANAGER: Operations Manager
MAIN DUTIES/RESPONSIBILITIES:
This role reports to the Operations Manager and is responsible for the running of the food services, food cost and kitchen operations at Gloucester Park Harness Racing.
This includes but is not limited to:
- Ensure that all meals for the restaurants, function rooms and fast-food outlets are produced to the required quality and efficiency standards.
- Ensure all kitchen and food preparation areas are in a clean and adequate state according to statutory food health standards.
- Ensure all kitchens and food preparation areas are cleaned and washed down after every use.
- Ensure that all kitchen equipment is clean, maintained in safe working condition and serviced when required.
- Perform stock count of raw materials and other food items as required.
- Supervision of all kitchen staff.
- Ensure best prices are received from suppliers and control the portion sizes for all menu items.
- Adhere to the budgeted staffing levels for kitchen operations.
- Provide spoilage and wastage reports for all outlets ensuring these costs are minimised.
- Produce the menus for all food outlets with a focus on creating seasonal menus in line with the latest food trends and achieving gross profit targets.
- Document and maintain standard recipes including cost of goods sold for all menu items.
- Provide reports to management as required.
- Assist in ensuring all kitchen staff adhere to Gloucester Park Harness Racing policies in relation to uniforms, food handling, food storage, rosters and meal breaks.
- Assist in ensuring all kitchen staff are inducted under established guidelines.
- Assist in the development and training of all kitchen staff.
- Order, manage and maintain appropriate stock levels for all food items.
- Any other duties as required.
SKILLS & EXPERIENCE
Qualifications:
- Trade Chef qualification
- Supervisor Food Handling certificate
Experience:
- Minimum 3 years experience in a similar position.
Skills:
- Excellent interpersonal and communication skills.
- Exceptional organisational and prioritisation skills.
- High level of professionalism and personal presentation.
- Ability to work through tasks methodically.
- Attention to detail and an ability to manage multiple priorities, tasks and projects.

- Intermediate work processing skills – Microsoft Outlook, Excel and Word.
