Head Chef – Cibaria Manly (Italian, High-Volume)

Cibaria Manly is a multi-level, 350-seat Italian venue overlooking Manly Beach, showcasing antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria and gelateria. From handcrafted pasta and wood-fired pizzettas to curated cocktails and house-made gelato, we deliver a true Italian dining experience from morning through late evening. The venue includes à la carte dining, private event spaces and a beachfront Caffetteria (from 7am), with Cocktaileria service inside 55North Bar (Manly Pacific Hotel, M Gallery).

We’re a local favourite with most evenings and weekends fully booked. Reporting to the Executive Chef and Chef de Cuisine, you’ll lead the kitchen and keep standards high as we continue to grow.

The Role

Lead, coach and roster a large brigade across multiple stations

Oversee prep, service and pass to ensure consistent quality & presentation

Drive menu execution and seasonal development (Italian focus)

Manage ordering, stock, waste and COGS; maintain labour to budget

Uphold strict food safety, hygiene and WHS standards

Identify, train and develop high-potential team members

About You

Full Australian working rights

4+ years in a senior kitchen leadership role (Head/Sous) in high-volume venues

Strong Italian cuisine background (fresh pasta, seafood; woodfire a plus)

Proven menu development and cost control skills

Calm under pressure, exceptional attention to detail and grooming standards

Formal cookery qualifications; Food Handling Certificate
Nice to have: Food Safety Supervisor, First Aid, butchery, pastry, woodfire experience, venue opening/scale-up experience, Italian language a bonus
