Palermo is a vibrant, modern Argentinian restaurant in Melbourne’s CBD, part of The San Telmo Group. Inspired by Buenos Aires’ famous dining district, Palermo blends bold Latin flavours with contemporary energy. Guests can expect premium wood-fired meats, fresh seafood, and house-made Italian-Argentinian classics served in a lively, open-grill setting that celebrates the spirit of Argentina.
As a Full-Time Commis Chef at Palermo, your day-to-day in our busy kitchen will involve:
Assisting with food preparation and cooking across various sections of the kitchen
Following recipes and plating guidelines to ensure consistency and quality
Maintaining high standards of hygiene, cleanliness, and food safety
Setting up and packing down workstations efficiently
Restocking supplies and assisting with deliveries
Communicating clearly with the team to support smooth kitchen operations
Taking direction from senior chefs and being open to feedback and training
Contributing to a positive and collaborative team environment
We’re looking for someone with:
Full-time, flexible availability
Unrestricted working rights in Australia
Minimum 12 months’ experience in a fast-paced, premium commercial kitchen
Strong time management and the ability to work under pressure
A genuine passion for food and the hospitality industry
Solid knife skills and confidence working in an open kitchen
Experience with grilling techniques (charcoal or wood) — a bonus
Experience with South American cuisine — also a bonus
A desire to learn, grow, and build on your qualifications in Commercial Cookery
A collaborative attitude and willingness to be part of a supportive team environment

From midday to late at night we offer a shared menu bringing people together just like a family Asado in Argentina.
In our endeavour to capture the essence of Argentine culture and cuisine, we have imported a bespoke 2.5 metre parrilla charcoal grill, hand made by Pirincho, a lifelong master of the craft. He is regarded as one of the most important parrilla craftsman in the world. Pirincho’s previous customers include former Argentine presidents, the Ferrari workshop in Modena, and the VIP restaurant in the Barcelona FC Stadium.
