The Role
The Head Sommelier/Floor Manager is the heartbeat of the venue - storyteller, curator of fine wines, and driver of operational excellence. Working alongside the Head Chef and Operations Manager, you will lead daily service, uphold beverage performance, and ensure every element aligns culturally with the venue's vision. You'll be instrumental in launching and executing the new restaurant experience, overseeing a refined and financially disciplined beverage program. You'll design and deliver training that empowers the team while reinforcing the venue's ethos. Beyond service, you'll also play a key role in marketing and storytelling, collaborating closely with the Operations Manager to bring the brand to life both in-house and externally.
Skills and Experience
The ideal candidate will bring the following:
- Relevant qualifications in Hospitality / RMLV / RSA / Approved Manager
- Proven experience running modern Fine Dining Restaurants and Bars
- Strong product knowledge in Japanese Cuisine and Hospitality
- Proficiency with POS, rostering, and reservation systems
- Dynamic, energetic, and hands-on leadership style
