Mercure Centro Port Macquarie and Birdrock Bar & Grill sit within the Flower Hotels group - a proudly local operator known for creating welcoming venues, exceptional guest experiences and strong community connections.

We’re looking for a full-time Food & Beverage Manager to join our leadership team as our current manager steps aside for maternity leave. This is a permanent role, not a short-term contract, with the opportunity to receive a full 1:1 handover directly from the outgoing manager. The position oversees Birdrock Bar & Grill, hotel breakfast service, functions, and in-house guest and group dining experiences.

This role is perfect for a hospitality leader who thrives in a hands on, fast-paced, premium casual environment and is excited by the challenge of driving both guest experience and commercial results across multiple outlets.

What You’ll Do

• Bring strong commercial acumen - confident with budgets, forecasting, GP analysis and driving revenue growth through promotions, activations and upselling strategies
• Oversee daily food & beverage operations while maintaining a strategic focus on standards, compliance, cost control and continuous improvement
• Balance hands-on floor leadership with proactive planning, business development and long-term growth initiatives
• A natural leader who can motivate, mentor and develop a diverse team, building capability at every level
• Partner with the kitchen and other HOD's to deliver innovative menus, promotions and activations that attract both locals and hotel guests
• Manage rosters, stock control, service standards and floor efficiency with a clear focus on both guest experience and financial performance

About You

• Previous experience as an F&B Manager, Restaurant Manager, or senior FOH leader
• Passion for hospitality and creating unforgettable guest experiences
• Strong leadership skills -able to motivate, mentor and grow a team
• Proactive, organised and confident in managing busy service periods
• Skilled in handling guest feedback and complaints with professionalism
• Experience with budgets, forecasting, rostering, POS and stock management systems
• Wine and cocktail knowledge is essential
• Flexibility to work evenings, weekends and peak trading periods
