Bar Manager – Bar Ricci

Bar Ricci is an exciting new destination that blends the warmth of Italian hospitality with the sophistication of a refined coastal dining experience. Our restaurant accommodates up to 150 guests, complemented by an intimate wine bar with seating for 50, creating a versatile and memorable setting where exceptional food, wine, and atmosphere come together. With a focus on the highest quality produce and carefully curated wines, Bar Ricci will deliver a dining experience unlike anything the Gold Coast has ever seen.

We are seeking an accomplished Bar Manager to join our opening team and take the lead in crafting and managing a world-class cocktail program that defines the Bar Ricci experience.

Key Responsibilities:

Manage all aspects of day-to-day operations of the wine and cocktail bar.

Lead, motivate, and mentor the Bar team to deliver exceptional guest experiences.

Maintain the highest standards of service, professionalism, and presentation.

Lead with bar recruitment, rostering, and staff development.

Oversee all bar operations, service and guest relations.

Ensure compliance with financial targets, stock control, and operational systems.

Work closely with the kitchen, restaurant and wine teams to ensure seamless service.

Hold current RSA (Responsible Service of Alcohol) certification as required before starting.

About You:

Proven leadership experience in finessed cocktail environment and top-end hospitality.

Minimum 3-4 years of bar management experience is required.

Advanced mixology skills with demonstrated expertise in sophisticated cocktail creation.

Strong operational knowledge and organisational skills.

Excellent people management and communication abilities.

A guest-first mindset, with an eye for detail and a calm approach under pressure.

Passion for Italian-inspired cocktails food, wine, and culture.

Must have current Australian work authorisation at the time of application.
