Harvest Hotels are searching for an experienced chef to join the kitchen team at The Milestone Hotel Dubbo. This role will suit people who have creative flare coupled with strong technical skills. The ability to work efficiently as part of a team in a fast-paced environment is critical.

You will report directly to the Head Chef. You will be responsible for maintaining the highest level of food standards. This position will strongly influence the overall performance and reputation of the hotel in the local community.

The venue is a favourite of locals and visitors alike. It's reputation is set on simplicity, great service and a fun and laid back atmosphere.

The duties you will be expected to complete in this position include but are not limited to:

Prepare, season and cook food

Ensure that food is of quality required to ensure health standards are met

Control temperatures of ovens, steam ovens, pans etc to ensure optimum cooking

Plating up and garnishing dishes and ensuring all dishes are of a high standard

Storing, freezing, and preserving foods as per safety regulations

Taking into account customer allergies and dietary requirements to make sure there is no cross-contamination

Working with head chef to plan innovative and exciting menus that will work well within our restaurant

Keeping track of stock and informing chef so orders can be placed

Assisting the chef in selecting and training new staff as required

We require the following:

Certificate 3 in Commercial Cookery or similar and at least 2 years' experience as a cook OR Certificate 4 in Commercial Cookery or similar

If you do not have a relevant qualification, a minimum of three years’ experience as a cook in a busy kitchen may be considered

Be a hands-on leader who get involved and who is capable of motivating and supporting the team

Have a professional attitude with good manners and have excellent presentation

Be able to work in a high-pressure restaurant always delivering top-notch service

This is a fulltime position.
