What You'll Be Doing
Lead and inspire in a high-volume, fine-dining environment, supporting seamless service (200 covers & more)
Maintain the uncompromising standards of quality and consistency that make Blackbird stand out every service
Master the art of wood-fired cookery, coal, aromatic woods, open flame, and all bringing flavour, technique, and showmanship to each dish
Mentor, train, and roster kitchen team members. You’ll be shaping the kitchen culture
Oversee kitchen operations: sourcing, prep, hygiene, safety, and troubleshooting under pressure
What You Bring
At least 2 years’ experience as a Sous Chef (or equivalent senior kitchen role) in a venue of similar size & calibre
Deep understanding of cooking methods, ingredients, and fine dining techniques
Proven kitchen/staff management skills, speed, accuracy, performance under pressure
Experience and understanding of stock ordering, stock management and and adhering to costing guidelines.
Familiarity with sanitation & safety regulations
A leader with strong time management, mentoring skills, training, rostering and a collaborative spirit
Excellent time management abilities
Familiarity with sanitation and safety regulation
