We’re on the hunt for a hands-on Restaurant Operator who lives and breathes hospitality—someone ideally local to the Bondi area who’s ready to take ownership of the venue and help us grow. What You’ll Be Doing

Leading and motivating our front-of-house team to deliver memorable guest experiences.

Running day-to-day operations: floor management, reservations and service standards.

Recruiting, training and rostering staff to keep everything running smoothly.

Working closely with the kitchen to keep service seamless and consistent.

Keeping an eagle eye on the numbers—managing budgets, controlling costs and boosting profitability.

Building strong relationships with suppliers and managing inventory.

Ensuring we meet all health, safety and licensing requirements.

Collaborating with ownership on local marketing and community engagement.

What We’re Looking For

A hospitality pro with at least 2–3 years in a restaurant, café or bar management role.

Strong leadership skills and the ability to inspire a team.

Excellent customer service and communication.

Confident with rostering, budgets and restaurant financials—you love hitting (and beating!) targets.

A Bondi local (or nearby) who understands the area and community vibe.

Approved Manager Number - LIQX

Current RSA certificate.

Bonus points if you love Italian food and culture!

What We Offer

$85,000 – $95,000 + super + performance bonuses, depending on experience.
