Restaurant Manager – Estate Vaucluse House
Location: Vaucluse, Sydney NSW

Estate Vaucluse House is an award-winning restaurant and wedding venue, set within 10 hectares of lush gardens and manicured grounds. As one of Sydney’s few remaining 19th-century mansions, it offers timeless elegance with a modern hospitality experience, hosting high-end dining, weddings, and private events.
The Role
We are seeking a dynamic and motivated Restaurant Manager to oversee the food and beverage operations at Estate Vaucluse House. This role is ideal for an experienced Restaurant Manager or an ambitious Assistant Manager ready to step up and take on the challenge of leading a premium venue.
You’ll ensure exceptional guest experiences, lead and develop a high-performing team, and manage operational and financial outcomes with professionalism and attention to detail. You will also play a key role in supporting the delivery of our award-winning weddings and events.
Key Responsibilities
Daily Operations: Lead service delivery, ensure guest satisfaction, manage reservations, reconcile cash, and control costs.
Staff Management: Oversee recruitment, induction, training, rosters, and performance development.
Financial Management: Prepare sales and booking reports, conduct variance analysis, manage budgets, and liaise with the Financial Controller.
Event & Wedding Coordination: Work closely with the Events team, manage onsite event operations, and ensure compliance with health and safety standards.
Inventory & Stock: Conduct stock takes, maintain equipment, and manage beverage orders.
Customer Experience: Handle feedback effectively, manage beverage listings, and create innovative food and beverage promotions.
Marketing & Communication: Support marketing activities, uphold grooming and uniform standards, and identify opportunities to add value for clients.
About You
Previous experience as a Restaurant Manager OR a strong Assistant Manager ready for the next step.
Solid knowledge of food and beverage operations.
Strong leadership, training, and people management skills.
Hands-on, professional, and proactive with a positive attitude.
Excellent communication, presentation, and problem-solving abilities.
Ability to thrive in a fast-paced, high-standard environment.
Process-driven with a focus on innovation and continuous improvement.
