This role is based in Rumble, located in the heart of The Star Sydney’s dining precinct. A modern restaurant with a contemporary take on South East Asian cuisine with a Thai influence.
About the Role:
This is a Chef De Partie role, reporting to the Group Executive Chef, you will oversee the daily preparation and the maintenance of the kitchen. This is a Part-Time role offering up to 5 days per week.
Main Responsibilities include but are not limited to:
Leading the Wok section of the restaurant, having immense knowledge and skill to amend and work on the fly.
Ensure all standards and procedures are met resulting in consistency, quality, and profitability
Work alongside the Sous chef or head of the venue to ensure quality, standard and performance of the venue and staff.
Foster an open and supportive working environment, training junior staff members in the operations as required
Assist in stock monitoring and ordering, ensuring stock rotation, maintenance and stock takes with the venue and assisting in maintaining the budgeted food cost percentage
Take part in regular interdepartmental communications and department briefing to ensure and work towards the collective goal of the venue.
About you:
Previous experience in a similar role
Excellent understanding of HACCP and food safety
Asian and western kitchen training with proven skill in Asian wok cooking
Strong Knife skills with knowledge in butchery and carvery.
Must be able to communicate clearly in English.
Must have full working rights in Australia and currently live in Australia.
