About Us
Pavoni Plus Pty, the team behind a’Mare Restaurant, has recently opened Cibaria Manly on Sydney’s Northern Beaches.
Cibaria celebrates the best of Italian dining through its many ‘rias’—antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria, and gelateria. Spread across multiple levels with 350 seats, we offer à la carte dining, group bookings, private events, and daily service from morning coffee at the Caffetteria through to late-night drinks at 55North Bar by Cibaria, located within Manly Pacific Hotel (M Gallery).
With its beachfront location, vibrant atmosphere, and a menu of Italian comfort food classics, Cibaria has quickly become a local favourite.
The Role
We are seeking Sous Chefs to support our Head Chefs across multiple kitchens and sections, including Forneria, Braceria, Spaghetteria, Caffetteria, and Pasticceria. This is an exciting opportunity to join a large, dynamic team in a premium, high-volume venue.
What We’re Looking For
Essential requirements
Full Australian working rights
12–36 months in a similar role within premium dining and/or trade qualifications
Strong background in Italian cuisine
Menu creation experience
Solid understanding of hospitality cost controls
Ability to perform under pressure with attention to detail
Professional grooming standards
Preferred requirements
Food Safety Supervisor and Food Handling certificates
First Aid Certificate
Fresh pasta-making, pastry, butchery, and/or seafood handling experience
Italian language skills (bonus)
Previous venue opening experience
Key Responsibilities
Lead and manage kitchen teams across multiple sections
Oversee food preparation and service, ensuring consistency and quality
Manage kitchen inventory, rostering, and labour costs
Maintain safety, hygiene, and cleanliness standards
Deliver training and support ongoing staff development
Uphold venue standards in food presentation and execution
