We are seeking a skilled and motivated Sous Chef to join our team at the Coriole Restaurant at Coriole Vineyards.
Location: Coriole Vineyards Restaurant, McLaren Vale (just 45 minutes from the CBD)

Our mission is to serve delicious, creative dishes which respect the seasonality of produce we source from the Estate and regional producers, while minimising waste and promoting sustainable practices.
Our restaurant services lunch 5 days a week (7 days from mid-December to January), and hosts weddings and other events.
We’re looking for a Sous Chef who can help lead our kitchen team, support our Head Chef, and continue our commitment to an exceptional restaurant experience.
Key Responsibilities:
Reporting to our Head Chef, you will:
· Direct daily food preparation and collaborate closely with the Head Chef
· Assist in the design and planning of seasonal menus
· Produce high-quality plates with attention to presentation and flavour
· Supervise, mentor, and train kitchen staff, ensuring efficiency and readiness for service
· Oversee rostering, ensuring staff are working productively and within allocated hours
· Order and check stock, prioritising produce from Coriole’s garden and farm, followed by local farmers and small producers
· Manage inventory, storage, and supplier relationships.
· Monitor and maintain kitchen equipment, cleanliness, and compliance with food safety standards.
· Take initiative to improve kitchen performance, solve problems quickly, and drive productivity beyond daily prep lists
· Lead the kitchen in the Head Chef’s absence
Qualifications:
· Previous experience as a Sous Chef in a fast-paced kitchen
· Strong leadership skills
· Strong communication skills
· Creative problem-solving skills and clear communication
· Commitment to continuous learning and innovation in sustainable cooking

About Coriole Vineyards
The soils are predominantly terra rosa soils (over 80%). These soils are shallow with red-brown earth over hard capped limestone. They tend to produce deeply coloured red wines with good structure and backbone that show great capacity for ageing.
The Estate vineyards are predominantly Shiraz, planted as early as 1919. The variety balance grown at Coriole is 65% Shiraz, 10% Sangiovese, 5% Chenin and 5% Cabernet Sauvignon. Other varieties are Fiano, Grenache, Barbera, Montepulciano, Merlot and Semillon. There are in total 25 different vineyards from 90 years old to 3 years old.
Coriole manages most vineyards where fruit is sourced. It also has vineyards in the sub-regions of Blewitt Springs and Willunga
