Jack’s Butchery locates in the town centre of Mount Druitt, NSW 2770 and we are a butcher wholesale shop established in 2018.

The Role:
As a Butcher, you may specialise in trimming and slicing raw meat and preparing meat for sale, operating meat or smallgoods processing machines, weighing, pricing, packaging, and displaying meat. The primary job responsibilities are as follows:
· Break down Beef, Pork, and Lamb and cut and pack them for sale and as per display.
· Cutting, trimming, wrapping, weighing, pricing, labelling the cut of meat and preparing customer orders.
· Greeting and speaking to customers, providing advice, answering questions, and accepting orders or payments.
· Make seasonings and pickles by mixing spices, salt and other ingredients.
· Operating sausage filling machines, smoking chambers, and cooking kettles and vats.
· Assist in ordering meat as per the stock, maintains the price level and perform quality inspections on meats and other products.
· Operated all machines in a meat department to grind, mix, mince and tenderise meat.
· Rotated the meat for sale in the case and reduced prices on proper items.
· Ensuring work areas are clean and compliant with all food safety and hygiene standards.
· Assist in inspecting and storing meat upon delivery. Ensures that all received meats meet or exceed Government quality standards.
· Clean up the machines and turn them off every evening.
· Clean up the display counters, mine machine, meat slicer, and band saw machine together with the cooler room and freezer room at the end of day and make sure all the counters and cool room are at the correct temperatures every morning.
Skilled and experience requirements:
· Minimum of four (4) years' experience working as a Butcher in a retail butcher shop environment.
· Certificate III in Meat Processing (Retail Butcher) or equivalent qualification.
· Proficient in breaking down beef, pork, and lamb carcasses, and preparing cuts according to customer orders and display requirements.
· Skilled in cutting, trimming, boning, slicing, mincing, and wrapping meat to specified portion sizes.
· Able to operate and maintain common butcher shop equipment such as band saws, slicers, mincers, sausage fillers, and vacuum packers in accordance with safety and hygiene standards.
· Knowledge of meat quality assessment, safe food handling, storage, and HACCP principles.
· Experience in preparing value-added products such as sausages, marinated meats, and cured meats.
· Strong customer service skills, including advising customers on meat cuts, cooking methods, and product selection.
· Ability to manage stock rotation, maintain product displays, and ensure freshness.
· Good English communication skills; bilingual ability is an advantage.
