A highlight of our offering is our daily high tea service centred around traditional Indonesian kue basah—a selection of handmade steamed and baked desserts. Rotating over 15 varieties weekly, this authentic halal patisserie experience has made Tempayan Bay a standout destination in Australia.

Role Overview:

We are seeking a skilled and passionate Pastry Cook with expertise in Indonesian kue basah and glutinous rice-based desserts. This role is central to our high tea service and overall brand identity, requiring the preparation of over 200 individual desserts daily across at least 10 different types.

Key Responsibilities:

Prepare, steam, mold, wrap, and plate a diverse range of traditional Indonesian desserts, including but not limited to kue lapis, putri mandi, kue sus, kue koci, and putri ayu

Produce a minimum of 200 dessert items daily, across multiple varieties, with consistent attention to quality, flavour, texture, and presentation

Prepare and cook traditional sweet fillings such as palm sugar coconut, ensuring authentic taste and consistency

Utilise traditional methods, tools, and presentation techniques, including banana leaves and specialty molds, to maintain cultural authenticity

Ensure strict adherence to food safety, hygiene, and quality control standards throughout production

Contribute to the development and testing of new and seasonal dessert recipes, aligning with customer preferences and cultural celebrations

Qualifications and Experience:

Applicants must meet one of the following qualification pathways:

AQF Certificate III in Commercial Cookery, including at least two years of on-the-job training; or

Certificate IV in Patisserie or Commercial Cookery, plus at least one year of relevant full-time experience; or

A minimum of three years of full-time experience in a commercial kitchen (no formal qualification required)

In addition, the ideal candidate will have:

Demonstrated experience preparing Indonesian or Southeast Asian desserts

Skilled use of steaming, dough shaping, and glutinous rice flour techniques

Familiarity with banana leaf wrapping and coconut-based fillings

The ability to work independently and meet high-volume production targets

Experience in a bakery, hotel, or commercial kitchen preferred

Understanding of halal preparation principles and food safety protocols
