Margot Osteria is on the hunt for a Senior Sous Chef ready to step into a high-impact role in one of Sydney’s most vibrant kitchens. Located on Barrack Street, our 120-seat Italian osteria blends old-world soul with modern edge — featuring a flame-fired open Basque grill, handmade modern pasta, and a front-row open kitchen that’s the heartbeat of our dining room.

What You’ll Be Doing
Running the pass, managing service, and leading the kitchen alongside the Head Chef
Designing and executing seasonal, produce-led menus that reflect bold Italian flavours with a modern twist
Mentoring and motivating junior chefs with hands-on training and leadership
Maintaining structure, consistency, and control across all sections
Driving quality, efficiency, and pride in every dish that leaves the pass
Being a key part of our business — involved in decisions, not just orders
Who You Are
A proven Sous Chef or Senior CDP with 5+ years’ experience in quality venues
Skilled across grill, pasta, and larder sections — with a love for open flame cooking and Mediterranean flavours
Clear, direct, and confident in your leadership — a driver of high standards and great culture
Organised, reliable, and passionate about quality, from prep to plating
Hungry to grow, lead, and contribute to a high-performing team
Able to thrive in a fast-paced, open kitchen environment
