Welcome to Vineria Luisa – your neighbourhood wine bar, gintoneria, and pre/post-theatre go-to. We bring the charm of Italy to the heart of the city with a focus on simple, honest dishes done exceptionally well. Our menu is rooted in tradition — think Italian snacks, daily specials, and comforting classics — all designed to pair beautifully with our curated selection of cocktails and an Italian varietal-heavy cellar.

We’re on the lookout for a passionate Chef de Partie to join our opening team and help us deliver an affordable, casual dining experience that celebrates flavour, hospitality, and heart.

What We’re Looking For:

We value personality, Italianity, and genuine passion. If you’ve got experience with Italian cuisine and thrive in a fast-paced, creative kitchen, we want to hear from you.

Please note that there are casual and full time positions for the right candidate.

Essential Requirements:

• Full Australian working rights

• Fluent in English

• At least 2 years in a similar role

• Certificate in Commercial Cookery

• Calm under pressure, positive attitude, and great attention to detail

• Strong communication skills and excellent grooming standards

• Commitment to delivering memorable guest experiences

• Flexibility to work weekends and public holidays

Bonus Points If You Have:

• Formal hospitality qualifications

• Food Safety Supervisor Certificate

• Hands-on experience making fresh pasta

• Deep understanding of traditional Italian cuisine

Key Responsibilities:

• Work closely with the Head Chef on menu planning, recipe testing, and cook-offs

• Ensure consistent quality, presentation, and execution of all dishes

• Help train and support kitchen team members

• Maintain food safety and cleanliness standards

• Support with inventory management and cost control
