Mures is a proudly Tasmanian, family-owned business with a passion for sustainable fishing and delivering an exceptional “hook to plate” seafood experience.
Located on Hobart’s bustling waterfront, Mures Lower Deck is a vibrant, high-volume seafood bistro, café and Fishmongers. We are seeking an experienced and proactive Duty Manager to join our dynamic leadership team and contribute to the ongoing success of this iconic venue.
About the Role
As a Duty Manager, you will be a hands-on leader responsible for all aspects of Front of House operations during your shift, driving consistent, high-quality service and overall restaurant experience.
This role suits someone who thrives in a fast-paced environment, takes ownership, communicates effectively, and who consistently upholds and role models structured processes and standard operating procedures (SOPs).

Key Responsibilities:
Lead the FOH team during service, ensuring smooth operations and high customer satisfaction.
Create shift plans, brief teams, and manage service flow in real-time.
Uphold and role model all Mures SOPs and operational standards—including service expectations, health & safety, food safety, and cash handling.
Provide real-time coaching, feedback, and performance recognition.
Support labour control, stock management and rostering as directed.
What you'll bring:
Minimum 12 months experience in a supervisory role in hospitality, retail, or tourism.
Strong floor leadership and problem-solving skills.
A genuine, warm approach with a focus on team engagement and guest satisfaction.
Ability to maintain structure and follow through on operational procedures.
