THE OPPORTUNITY:

We have an exciting role for an experienced, energetic and passionate SOUS CHEF to join our team to support the Head Chef in driving the team to deliver operational excellence across all food outlets, with a specific focus on the primary outlet; Fiftysix Dining.

The Shellharbour Club is seeking the very best to join our progressive and innovative team, which means you will know the market, understand existing and emerging trends in food and be outcome focused in this busy-high volume operation.

THE ROLE:

· FULL-TIME Sous Chef role, reporting directly to the Head Chef.

· Collaborate with the Head Chef to create and implement menu reviews.

· Manage and develop the 20+ plus kitchen brigade team members.

· Drive and achieve the highest food standards in order to exceed customer expectations.

· Accountability for successful kitchen operations including service, management and compliance.

YOU ARE:

· An experienced Sous Chef, trade qualified and have previous experience at this level.

· Energetic, passionate about the industry, ambitious and driven to achieve success.

· A leader that can motivate and assist in the training and development of a large kitchen brigade.

· Able to demonstrate strong skill and knowledge in the areas of Work, Health and Safety and HACCP.

· Able to oversee the daily operations of the kitchen in the absence of the Head Chef as required.
