The Role
We are seeking a highly professional and experienced Sous Chef to assist in leading our highly skilled kitchen team. We can organise accommodation if required to assist with immediate start.
In this hands-on role, you will be responsible for:
Running of the kitchen in the absence of the Head Chef, ensuring quality and service standards are maintained
Assist with creatively designing menus of minimum one hat standard with globally inspired Mediterranean influence
Lead and inspire a reliable kitchen team capable of servicing high-volume and various service periods and to achieve excellence and consistent high-quality meals
Assist in the management of food and labour costs, and develop strategies and systems to reduce costs and wastage
Manage and maintain a clean, safe and hygiene kitchen environment
Liaise with front of house to ensure the smooth and efficient delivery of each service
About you
Sous Chef key responsibilities include:
Assist in creatively design menus of minimum one hat standard with globally inspired Mediterranean influence
Enhance brand recognition of both venues
Lead a reliable kitchen in head chefs absence team capable of servicing multiple high-volume venues over various service periods and to achieve excellence and consistent high-quality meals
Source the best local, fresh, seasonally grown produce
Build close relationships with suppliers to ensure competitive pricing
Maintain tight COGS and budget parameters
Monitor and enforce Workplace Safety measures
Develop effective and efficient systems to maximise productivity
Accurate record keeping of temperature logs, cleaning and maintenance schedules.
Rostering that reflects seasonal requirements and maintaining budgeted labour costs.
Successful candidates will:
Experience in leading a team within a strongly branded high end environment, preferably hatted
An acute awareness of the significance of brand recognition
Knowledge and understanding of the challenges in opening a brand-new venue.
Experience in high volume/ high end restaurants
Excellent leadership and communication skills with the ability to inspire and motivate their team
Experience in a diverse range of international cuisine, particularly Mediterranean
Flawless ability to maintain budgeted labour costs regardless of seasonality, COGS, hygiene, record-keeping and wastage
Excellent presentation, time management, reliability and communication skills
Knowledge, implementation and upkeep of workplace health & safety procedures
A genuine passion for delivering great food consistently
Meticulous attention to detail and consistency
Ability to communicate with large teams inclusive of wait staff
Motivation for self-improvement, growth and excellence within the industry
Minimum two years in a similar environment as a Sous Chef
